The year 2015, when the all-day dining restaurant Rochester was born, was a special year, the 400th anniversary of Lord Ieyasu.
And Hamamatsu is the base of Lord Ieyasu's rule. We want our guests to fully enjoy this special connection.
With this in mind, we have prepared a “breakfast menu with a connection to Lord Ieyasu”.
To make your time spent with us feel special, every detail of the menu expresses the history and connections of Ieyasu no Koto.
We hope you will start your day with a happy and powerful spirit by taking in the good fortune of success from the very first morning.
That is what “Tenshu no Asage” is all about.

“Do no Zen”

This is the kitchen of victory, where Ieyasu imagines himself going into battle.
The meal is meant to inspire the morale of Ieyasu's retainers, as he himself is filled with strength. You will experience such a story.

Shizuoka's specialty: Fuku Soba noodles with tea

Soba noodles made with Shizuoka's specialty tea, which was loved by Lord Ieyasu.
It is said that Ieyasu, in order to fully enjoy the delicious taste of tea, built a storehouse to store tea and filled a number of tea jars, which were praised as masterpieces, before maturing them to enjoy their deep flavor.
Soba (buckwheat noodles), known as “Fuku Soba”; in the Edo period (1603-1867), is also known as a food to bring good luck.

Fukuro Omelet

Natto is a traditional food of Hamamatsu City, where natto is fermented soybeans but not stringy.
This omelette is finished with “Hama-natto”, which is said to have been a favorite of Lord Ieyasu.
The word “fuku-kago” means “basket” in Japanese, and the owl is an owl and the egg is a basket, so we put the “Hama-natto - happiness and health” in the basket and hope that it will not escape.

As a valuable source of protein, Hama-natto is well preserved and easy to carry.
It is deeply moving to think that Lord Ieyasu may have eaten the same food.

Eggplant is known as Ieyasu's favorite food.
The words “one Fuji, two hawks, three eggplants” are said to be associated with Ieyasu.
The eggplants are soaked in a richly flavored deep-fried sauce.
This dish is named after Lord Ieyasu, who always liked to eat things that brought him good luck.

Ieyasu was so careful about his health that he personally prepared his own medicine.
During a falconry trip, Ieyasu was told by the village headman he visited about an ingredient for good health and longevity. Sansho (Japanese pepper).
Since then, sansho has been Ieyasu's favorite food.
The fatty tunas were slowly stewed with sansho, which has such a connection with Ieyasu.

Ieyasu believed that falconry was beneficial for maintaining good health.
He also believed that meat would strengthen blood vessels and muscles, and since poultry meat is low in fat and rich in protein, he caught and ate cranes, quail, pheasants, ducks, rabbits, and other game birds.
Hatcho miso, which is said to have been a favorite of Lord Ieyasu, is also used in the Tenmenjan sauce.

The image of “Lord Ieyasu the Fighter” during his days at Hamamatsu Castle, when he was a weak feudal lord who was on the verge of becoming a shogun, is the very path to success in the world.
This curry was created in honor of the spirit of such a fighter.
This dish is made with Grand Hotel Hamamatsu's traditional curry roux, Hamamatsu's traditional food “Hama Natto” and lavish use of ingredients related to Lord Ieyasu.
Ieyasu said, “Success in life is won by fighting for it,” and we hope you will enjoy this dish that will help you win your success in life.
